Savvy cooks know that buying a whole chicken is much more economical than buying prepackaged pieces, and there’s a lot more you can do with a whole chicken than simply roast it! In this class, you will learn how to break down a chicken in minutes and receive a whole organic chicken to practice on in class. Then Alex will demonstrate how to use each piece so everything is delicious and nothing is wasted! We will make chicken stock for soups and sauces; braise the legs, pan roast the breasts and more. Bring a (sharp) chef's knife and/or a boning knife with you to class.
