The Indian Kitchen: Love Your Legumes

Prized around the world for their dense nutritional qualities and economical value, legumes lend a versatility in the kitchen that goes unmatched by many other plant-based ingredients. They partner perfectly in appetizers, salads, soups and spreads, and even in delicious desserts. Join Shankari as she explores the legume bean in a variety of delectable traditional Indian dishes: chutney with coconut and green chilies; roasted garbanzo beans; spicy masoor dal—rice pilaf with pink lentils, and a sweet and creamy kheer seasoned with cardamom.
