Filipino cuisine draws from Chinese and Spanish influences and is flavored by a rich variety of herbs and spices, tropical fruits and vegetables, and local fish, meat and poultry. Chef Dio shares traditional dishes from his own family in the Philippines: lumpia Shanghai with garlic vinegar dipping sauce; vegetable pancit; chicken adobo; kabocha squash in coconut curry, and creamy leche flan for dessert.
