Join Jill for a chocolatey celebration! We will make cocoa nib crusted filet mignon; hand-rolled chocolate truffles with a hint of chili; dried cherry and almond biscotti dipped in chocolate, and chocolate mousse crepes drizzled with raspberry sauce. We will sample what we make in class and take home truffles and biscotti for Valentine’s Day. Jill will cover the history of chocolate and how it is made, how to choose chocolates and pair wines with them, and essential techniques for working with chocolate. This class combines hands-on practice with cooking demonstrations.
