When you know how to put your spice rack to good use, your cooking will never be boring! Shankari shares tips for using whole and ground spices to create mouthwateringly zesty dishes: tangy tamarind curry; varan bhaat—dal seasoned with cumin seeds and a dollop of ghee; rajma—slow cooked curry with red kidney beans and assorted spices, and modur pulao—a sweet rice made with basmati, ghee, sugar, saffron and whole spices.
