The Vegan Kitchen: Whole Grains

Whole grains are a staple which have sustained civilizations throughout human history, yet we rarely partake of the diversity of the grains available to us. In this class, we’ll discuss the variety of whole grains in the Co-op’s bulk department and create several nutrient-dense dishes: quinoa patties; wild mushroom risotto; Florentine farro salad, and corn polenta with caramelized onions and sauteed kale.
