Introduction to Healthy Vegan Cooking: Salads & Dressings
Tuesday, June 11 2013, 6:30pm - 8:30pm


This series of classes explores what every vegan cook should know. Whether you are a dabbling herbivore or strictly follow a plant-based diet, these classes will inspire you to create nourishing and satisfying meat-free meals. Emily will cover the basics of nutrition, equipment, and essential techniques as well as recipes to help you thrive on a whole foods, plant-based diet.

In Salads & Dressings, you’ll learn how salads are an essential part of any vegan’s diet. In this class, we’ll discuss green salads including different types of greens as well as tossed vs. composed or layered salads. We’ll discuss salads made from whole grains, potatoes, pasta, beans and more, and dress them with healthy classic dressings made without animal products and without oil! Menu: massaged kale salad with avocado, lemon and sea salt; Caesar salad with homemade garlic croutons; creamy cashew ranch; dreamy vegan mayo, and fat-free balsamic vinaigrette.
