Burrata Workshop
Thursday, May 23 2013, 6:00pm - 8:30pm


A specialty of Puglia, Italy, burrata resembles a soft mozzarella with a surprise inside: a creamy, lava-like center that derives its name from burro, Italian for butter. This class builds on the skills of mozzarella-making and takes it to another level! Completion of the hands-on mozzarella class is recommended but not required. We will develop an understanding of protein elongation and pasta filata cheeses and create delicious burrata, filled with our own stracciatella and cream.
