Mexican food is as diverse as the different states that make up our neighbor to the south. Join Chef Dio for a roundup of authentic, regional specialties as he shares some of his favorite Mexican-inspired dishes: chiles rellenos; turkey with a rich and earthy mole sauce made with chocolate, cinnamon and peanuts; chicken with creamy pipian sauce made from pumpkin seeds, and cochinita en pibil—savory braised pork in banana leaves.
