Pork to Fork

Local organic pork is the star as we feature “Riverdog Hog” from Capay Valley’s Riverdog Farm. These well-fed hogs’ pasture-based diet is supplemented with whey from Cowgirl Creamery, Three Twins ice cream, and vegetable trimmings from the Co-op’s Produce Department—resulting in meat that is succulent and flavorful! Our menu makes the most of it: smoked pork sandwiches with cider-vinegar BBQ sauce; pork adobada tacos; apricot and rosemary stuffed pork chops; crispy pork belly salad, and a pear-ginger tart in a shell made with Prather Ranch Meat Co. lard.
