Locally grown eggplant is abundant in the summer, but what to do with all that bounty? Italian cuisine makes the most of eggplant, and this class will inspire you to do the same! We will make an appetizer of thinly sliced eggplant, pan-fried and oozing with fresh mozzarella; caponata crostini; roasted eggplant and tomato salad; eggplant and onion frittata, and stuffed eggplant with prosciutto and provolone.
