  • 2 T. fresh lime juice
  • 112 T. extra-virgin olive oil
  • 1 T. honey
  • 14 t. salt
  • 18 t. ground red pepper
  • 3 c . cubed seedless watermelon
  • 112 c. sliced peaches
  • 12 c. vertically sliced red onion
  • 14 c. fresh mint leaves, torn
  • 2 T. thinly sliced fresh basil
  • 1 lb. heirloom tomatoes cut into 1-inch chunks
  • 13 c. (about 112 ounces) crumbled goat cheese (optional)


  1. Combine first 5 ingredients in a large bowl, stirring with a whisk. Add watermelon and next 5 ingredients (through tomatoes); toss gently.
  2. Cover and refrigerate 2 hours or until thoroughly chilled. Sprinkle with goat cheese just before serving.
