|Curried Chicken Salad Sandwich|
This sandwich packs a punch as a good source of protein with approximately 33 grams of protein from the chicken, bread, and pine nuts. It's also a good source of fiber.
½ lb grilled chicken breast, diced
½ fuji apple (or your favorite apple), diced
½ stalk celery, diced
3- 4 Tbs Spectrum Natural Organic Mayonnaise w/ Omega 3
¼ tsp curry powder (more or less to taste)
3 Tbs toasted pine nuts
salt & pepper to taste
2 slices Rudi's Organic Bakery bread – Honey Sweet Whole Wheat
1) Dice the chicken, apple, and celery in small cubes all about the same size.
2) Place in a mixing bowl. Add mayonnaise, curry powder and toasted pine nuts. Spread on bread.
3) Makes enough filling for two sandwiches.
